A ground of compounding is "Blintzess stuffed", as a product of functional orientation

The possibility and expediency of creating functional products in the form of semi-finished frozen "stuffed Pancakes"is substantiated. By means of mathematical modeling, the mass fraction of protein-lipid-vitamin coagulate relative to the content of liver in the filling is justified. This approach allowed to create a recipe and technology of the product of functional orientation in the form of "stuffed Pancakes" with a given physiological effect.
