Evaluation of the quality of hard cheeses sold in the retail chain

The article describes the results of the study of evaluation of the quality of hard cheese varieties sold in the trading network of Tyumen. In the process of the study, the theoretical basis of the examination of cheeses was studied and a qualitative assessment of the experimental samples of cheese "Russian" was carried out. According to organoleptic indicators revealed that the appearance, taste and smell, consistency, pattern and color meet the requirements of GOST 32260-2013, except for the sample manufacturer LLC "Tyumen dairy cheeses" Tyumen, which revealed the following inconsistencies: rubber consistency and mild taste and smell, which does not meet the requirements of GOST 32260-2013. Analyzing the obtained data on physical and chemical parameters, we can conclude that the mass fraction of fat, moisture and salt meets the requirements of GOST 32260-2013. Practical recommendations were presented in the analysis of the results of these indicators. It is proposed to strengthen the control of veterinary and sanitary quality of finished cheeses, as well as raw materials for their production.
